5 omakase restaurants in Singapore

When you say omakase, or "it's up to you", in a Japanese restaurant, you are, in essence, entrusting the entire dinner experience to the chef.

The chef then deftly crafts a series of courses -- usually comprising sushi, sashimi, grilled and/or simmered dishes -- using the freshest Japanese ingredients he has in store.

But while Japanese-sourced ingredients were prized in the past, many Singaporeans have shied from these in the wake of recent events.

With strict checks in place on imports from the disaster-hit Tohoku region, Japanese restaurants were left scrambling to source ingredients from alternative venues, both in and outside Japan.

Some restaurants, like Tatsuya, are trekking further afield to Chiba, Fukuoka and Hokkaido for their seafood supplies. Others, like Waku Ghin, have pulled all the stops on Japanese imports.

Now, with confidence in Japanese restaurants restored, we sniff out the best venues to experience chef-driven omakase.

Dungeness crab holiday meals

4 live or cooked Dungeness crabs (if using cooked crabs, skip to second step)

Bring pot of salted water to a rapid boil. Place live crabs into the water for 8 minutes. Remove and place into a ice bath to cool for about 10 minutes.

Separate the claws and legs and put them on ice. When cool, extract the meat with a pair of small scissors; serve these on a platter with some dipping sauces (see below) and cut lemon. Separate the head from the body and extract the meat from the body cavity. Crack the shells and reserve all the scraps for the soup. Keep all crab meat on ice when working with it, and in the refrigerator when not.

Dungeness bouillabaisse

Ingredients:

• 2 tablespoons olive oil
• 4 shallots, sliced
• 3 carrots. peeled and diced
• 1 garlic clove, unpeeled
• 1 apple, sliced
• 1 head fennel, sliced
• ¼ cup Pernod (anise liqueur)
• 1 cup white wine 
• 6 cups fish stock

• 2 tablespoons fennel seeds
• 1 tablespoon coriander seed
• 2 fresh bay leaves
• 1 tablespoons saffron (optional)
• 1 cup cream
• salt
• reserved meat from the crab bodies
• 1 pound mussels, cooked
• 1/2 pound sable filet (or any white fish)

Directions:

Heat the olive oil over moderate heat in a large saucepan. Add the crab shells, raise the heat and cook for 7 to 10 minutes. Next, add the shallots, carrots, sliced apples and fennel and cook until they release their liquid, about 6 minutes. Deglaze with the white wine and Pernod and burn off the alcohol.

Add the fish stock and spices and cook at a simmer for 4 minutes. Strain in a colander, pressing the solids to extract the maximum amount of the liquid without forcing too hard. (You just want the clean flavor.) Reserve 1 cup of the broth before you add the cream for the pasta dish.

Return to a clean saucepan, add the cream and reduce to the desired consistency. Then bring to a gentle simmer and add back the body meat, as well as the fish and shellfish of your choice. Adjust the seasoning.

Ladle the soup into the hot bowl and garnish with the fennel pollen, upland cress (watercress works, too) and serve with crusty bread.

Dungeness pasta

If using fresh pasta, cook in boiling salted water for 4 minutes. If using dried pasta, refer to instructions on package.

Ingredients:

• 1 cup crab stock
• 3 tablespoons diced, cold butter
• Lemon
• Picked parsley, dill, tarragon

Directions:

Put crab stock to a large saucepan and heat to a simmer; swirl in the cold diced butter until the sauce comes together. Adjust the seasoning.

Add the cooked fresh pasta right into the sauce and toss. Next add the crab meat and take off the heat. Finish with fresh lemon juice and herbs.

Dipping sauces for the claws and legs

Cogley suggests using a variety of sauces, such as a whole-grain mustard and mayonnaise mixture, cocktail sauce and aioli.

Travel

Being to Zagreb in November.

From the airport, shuttle bus to the  shuttle bus terminal in the city stops just outside the right hand side exit near the tourist information office.  The fare to the city terminal is 30 KN per person.  There is no extra charge for luggages.

The airport shuttle runs from 5am to 8pm daily at half hour interval.  Check with the tourist office and shuttle bus office for detailed schedule.

The bus ride from airport to the city takes about 25 minutes.  Upon arrival at the bus city terminal, you will find a tram line outside the bus terminal.  Cross the tram line to reach the opposite platform to take tram nos 2 and 6 to the Central Railway Station(photo above).  You have to buy a 8 KN ticket from the newsstand.  The ticket is good for 90 minutes for subsequent tram rides within the city area.

Tram nos 6 continues it journey to the city town central.

Have a good time in Croatia; I did.

Travel

A lot of travel agencies around Yogyakarta could arrange a trip to Borubudur for you for a price. But if you are travelling on a tight budget, you could easily visit Borubudur by yourself. Here's how you could do it:

1. From Malioboro, you can take a 2A Trans-Jogja Bus for only 3,000 Rupiah and alight at Jombor bus station.

2. From Jombor bus station, you can take a one hour bus that goes to Borubudur bus terminal which cost locals only 7,000 Rupiah but most bus inspectors usually charge higher for tourists. We paid for 10,000 Rupiah each on our last trip.

3. Once you reach Borubudur, you can walk for approximately 15 minutes towards the entrance gate. Alternatively, you can take a rickshaw or a horse-drawn carriage.

4. Borubudur Entrance fee for foreigners cost $15 or 135,000 Rupiah with free bottled water. Tourist guides inside the temple are available for an additional fee.

Travel

Catch a taxi from the official taxi queue outside the arrival hall.  It costs 16 us$ to go to any hotel in the city.

There are plenty of hotels in the old quarter.

Hotels around West Lake offer a more quiet atmosphere but they are outside the city centre.

It is a good 17km if you are thinking about walking round the West Lake in the morning. Hahahah

You are going to like the many nice shops and eating places within the West Lake area.

Everyone must try a sip of the newly brewed Vietnamese coffee; omg you will enjoy it.

The Nha Hang Ngon Restaurant  at 26 Tran Hun Dao, Hoan Kiem, serves very good yummy Vietnamese foods.

If you must eat western food, try the Green Tangerine at 48 Hang Be.

Take a day trip to Halong Bay.  The oneway journey is 4 hours, but it is worth it.

Oh yes, please take good care when you are crossing the road.  You will know what I mean when you are in Hanoi.
